Love avocado, the you need to make these deliciously filling wholefood recipes and start to your day with my gourmet versions of an Aussie classic. Here I have rounded up five of my favourite super fresh ways to enjoy this staple brekkie with a little twist on how you may have always prepared it.
It'll only take you seven minutes or less to put any of these recipes together they are so easy to make. Each one contains a balance of nutrients that are guaranteed to give you natural energy all morning until lunchtime. Add them to your meal plan and give these gourmet toastie recipes a go this coming week.
Breakfast is such an important meal of the day. After a night of fasting, your body is primed for activity all day. Fuelling your body first thing with a well balanced plate will give you the natural energy (no caffeine required), brain power and essential nutrition to make it through your busy day without experiencing those nasty blood sugar crashes or food cravings.
So simple to make on a high fibre bread of your choosing and prepare in a matter of minutes. Whether you prefer wheat, rye or gluten-free, look a for a high fibre bread (6g of fibre or more) with only a few key wholefood ingredients. Gourmet Smashed Avocado Toast Recipe
Ingredients
1-2 slices of high fibre bread, whole grain wheat or gluten-free
1 whole Hass avocado, pitted
1 pinch pink rock salt
1 pinch cracker pepper
2 tsp chia seeds, high in fibre
Method
Toast the bread slices and smash the avocado over the toasted bread. Add a pinch of seasonings and sprinkle of chia seeds. To make this basic recipe (which is yummy just as is) more gourmet try the following recipe ideas.
Healthy Avocado Toast Recipe Ideas
Making you hungry? I've rounded up my favourite avocado recipes. These gourmet toasts are super delicious and easy to add to your meal plan for either breakfast or lunch. They also make a gorgeous Sunday brunch recipe with friends or a loved one.
Traditional Egg & Smashed Avo Toast
Using the above recipe as the base, pouch or pan fry 1-2 eggs and add to the top of the avocado smashed toast. Pinch a few sprigs of fresh, organic snow pea shoots and lay over the top of the egg. Drizzle with a few teaspoons of balsamic glaze. Crack pepper over top and enjoy!
The Red Onion & Feta Gourmet
Using the basic recipe, cut 1 slice of red onion, thinly, and lay the rings to the top of the avocado toast. Sprinkle 1 tablespoon of crumbled feta over the top. Chop 4 cherry tomatoes super finely and add to the feta topping. Pinch a sprig of fresh basil and lay over the top of the toppings. Drizzle with a few teaspoons of pesto infused olive oil and devour!
Spicy Mango Avocado Breakfast Toast
Using the basic recipe, chop 1/2 a fresh mango into fine cubes and add to the top of the avo toast. Finely chop one sprig of coriander (or mint) and add to the along with a pinch of broccoli shoots (see salad section of the grocery shops for this), and lay both over the top of the mango. Sprinkle 2 teaspoons of chia over top. Drizzle with a few teaspoons of your favourite chili glaze (or just a light powdering of cayenne flakes) and enjoy!
Pear Avocado Walnut Toast
Using the basic recipe, slice a William Bartlett pear into very thin slices and lay over the top of the avocado on the toasted bread. Sprinkle 2 teaspoons of feta or blue cheese and 1 tablespoon of crushed walnuts over top. Add a small handful of micro green seedlings, drizzle with 1 teaspoon of cinnamon-infused raw honey.
Mexican Salsa Breakfast Toast
Using the above recipe as the base, but instead of smashing the avocado, chop it super fine into chunks. Add to a mixing bowl and then dice 1/2 a red onion, 4 cherry tomatoes, and finely chop 2 sprigs of coriander. Add all these to the bowl of avocado with 3 tsp of olive oil and 1 tsp of lime juice. Combine well and add to the toasted bread. Lay a few micro greens over the top and drizzle with a chipotle mayonnaise. Yum!
